I remember my first bite of spinach pie
Olive oil and butter soaked crispy filo 
Dill, onion, and fresh spinach
Made by a Greek woman hands
Fed my belly and ever since I understand
To be Greek- you must try these dishes
And try your best to comprehend
That our language and cusine
Has been fused with so much
During slavery we taught our language 
And customs in the dirt and caves 
And even in the sand
Greek women do so much to tend 
To their families from the young 
To the single to the married
And divorced and widowed
They have taught us so much
They have gone through so much 
To prove their love to us
While you engage in conversation
And have another bite
Remember what they have gone through
To make our spinach pie
